What is tea? A series where we will learn by comparison. I will offer blind tasting sets that demonstrate core processing standards between premium market teas, and the unique artisan teas I've been collaborating with my friend in Taiwan on for many years.

In this case we will learn what the character, feeling, and quality of "fermentation" in Red Oolong.  Comparing two red oolong style teas from Taiwan using the same Wuyi tea plant varietal - one is a premium modern market tea from a well known organic operation but has no core fermentation, and the other is a pure microclimate, custom processed, properly fermented red oolong made by my long time collaborator and friend 常行深 

The premium market tea is actually more expensive in the international market, and is considered the quality standard for the style of processing.  Teas made in the modern mass industrial agricultural tea industry have lost the processing that makes tea healthy for everyday consumption.  

In opposition, the red oolong I'm offering for you to learn from expresses proper artisan craftsmanship in tandem with some genuine joie de vivre.
